I installed sensors-applet and all its dependencies and the applet did not show up in the list. Then I installed the packages aloniv mentioned. A restart was required and then I could add the Hardware Sensors Monitor. I did not have to add anything else to the panel.
If you are looking for CPU temperature I found that installing these packages makes it available (maybe some are redundant):
gnome-panel-bonobo indicator-applet indicator-applet-appmenu sensors-applet
A restart might be required and then you just add "Hardware Sensors Monitor" to the panel (maybe you also need to add the "Indicator Applet" to the panel).
