Which 2tb hdd should I choose taking the hdd firmware spyware into account?

There is no permanent confirmation of an HDD manufacturer not having spying firmware, as they are all proprietary. Thus, buy purely based on price.

As far as I remember, and as long as I understood correctly what I've read about it - the spying firmware in hard drives works only on winddoze

By definition, the firmware run on the disk itself. It is independent from the OS.

This doesn't make sense or maybe some explanation is missing ... just think about wifi firmware;
if what you say is true, why does the linux kernel (in a broader sense, the OS) have to provide proper firmware for the wifi card to function?
Shouldn't the firmware be installed and executed on the device and work no matter which os i'm using?

It can be installed and executed on the device and work no matter which os you are using. But, then, it cannot be as easily updated.

I am referring to the Equation_group_questions_and_answers.pdf . Reading that pdf it seems quiet obvious to me that in order to work it needs windose. Maybe give it a read. Maybe i am too anti-talented for informatics and I misunderstood everything. That's a possibility certainly.. Anyway read it and answer back. I'd really like to know your opinion on this.
