What would be the better rout for installing the latest gemrb release on Trisquel 7, the PPA or just compiling it from source?

General answer (not specific to one program):
With the PPA you must trust whoever is behind it to not have inserted any malware in the software. Also, proprietary software may be added to the PPA and you may be driven to installing along an apparently trifling update.
That said if you trust whoever is behind the PPA, it is the way to go. It much easier than finding and installing the dependencies and then compiling. And you get updates.
