Is is safe to use the default virtmanager,virtinst and qemu on the synaptic manager?
I see that it's outdated.

Although the version of qemu in the Trisquel repo is a bit old, it is still getting security patches, it's gotten one by the end of the last year, for example.
It seems to take a few weeks for upstream (Ubuntu 16.04) to create those qemu patches though, probably since 16.04 is no longer the newest LTS release for Ubuntu.
It is probably the same for virtmanager or virtinst, but I haven't heard of any problems with them.
