Missing possibly free software applications to install on Trisquel?

Why can't I see them to install on Trisquel?
Gimp should already be installed on your Trisquel. But I don't think any distro installs Session, Signal or OpenOffice for you. You'll have to go to their web pages and see if they have downloads that will work. I don't even know if Signal or Session are free software, I've never used them.
Moxie Marlinspike, who operates signal servers, said that anyone is allowed to use and modify the signal client but is not allowed to call it signal (or have the name signal in it) and not allowed to use it to connect to official signal servers. See https://github.com/LibreSignal/LibreSignal/issues/37#issuecomment-217211165 and a few later comment by "moxie".
I guess that Moxie Marlinspike cannot legally forbid using a modified signal client to connect to his servers, but he probably can make the modified client not work properly, so it makes little sense for distros to provide it.
I don't know whether the flatpak version is compiled from sources or just repackaged binaries from signal. In any case, I would recommend using xmpp/jabber rather than signal.
GIMP and LibreOffice (which is OpenOffice with actual development) are in Trisquel's default install and in the repository (the packages are named "gimp" and "libreoffice"), if you use an edition without them.
Session and Signal are not there, but they are in Flathub. Assuming you have not installed it yet:
$ sudo apt install flatpak
$ flatpak remote-add --subset=floss flathub https://flathub.org/repo/flathub.flatpakrepo
$ flatpak install flathub network.loki.Session
$ flatpak install flathub org.signal.Signal
Session offers an App Image off their site as well a there being a Flatpak available:

Is there a reason you prefer Open Office over Libre Office ?

I prefer Open Office because it reads better my old office documents (highlights, number formatting, etc.)
