secure communication protocols

Could you suggest secure libre communication protocols for Internet video conferences?
The conferences will generally be between someone from group A and someone from group B. I am in group A. Group B has servers so they plan to implement anything server-based.
Is there any implication for group A's liberty/privacy if group B hosts the server program? I imagine not ... since the video conferences will involve one member from each group (A and B).
Do you happen to know of any academic/peer-reviewed article that supports libre specifications' claim to security? Particularly if it's on one of the communication protocols that we might be able to use.
Jingle on XMPP (many clients, including Pidgin in the default Trisquel) and Jitsi (choose the latest version on http://jitsi.org) are options. WebRTC is an option too (e.g., Firefox Hello is available in Abrowser).
Videoconferencing is communicating. It is not possible for the two (or n) ends of the communication to control the software. If one of them hosts the communication server, then it is harder for an outsider to listen to the communication. It therefore is better for privacy. However, encrypting the stream is even better. Jitsi has such a feature.
Thank you root and Magic
I use qTox.
