Does anyone know how I can disable multiple instances of Evolution?

System>Administration>System Monitor>Processes>Scroll down to "evolution", right-click on it, and click "End process". If a window is misbehaving, try installing xkill. (sudo apt-get install xkill)

Thank you, but that is not what I meant. I want to know how, when an instance of Evolution is already running, to prevent another one from starting when I launch it from the menu. Instead, it should focus on the instance already open.
