I don't know what "Actual desktop" is supposed to mean.

I'd like to see GNOME Shell as the default DE in Trisquel 7.

I can't stand it!!! I love other versions of gnome. The way I see it, Gnome Shell looks like a mobile or tablet with Google bubble embedded.

As I can see, that would be fatal for Trisquel. There are not many developers to change and make a Trisquel version running on Mate. Moreover, there will appear newer bugs to work on as Trisquel is done to get on with Gnome.

From what I see Mate will be in Ubuntu 14.04 repo.

IIRC, Mate will be brought to the Debian reps in next months/year. So, maybe by the time Trisquel 7 comes out, it won't involve all that work, one could just access Debian rep and install it from there (assuming Ubuntu doesn't get it imported to their own, that would even simplify more the process).
To be fair, I like to use Gnome 3 fallback mode, which is very similar to Gnome 2. But since Mate is based on gnome 2, I think it would be better to that way, using pure Gnome 2 instead of relying on fallback mode which can just stop being provided at any moment.

How about no desktop environment, but instead a script to let the user choose which one to install and use the first time he boots up. That way everyone gets their desktop of choise.

You can currently choose between a GNOME Classic (or whatever it is called today) user experience or a LXDE user experience (Trisquel Mini edition). You can also install the NetInstall version and then fire those commands to get a KDE edition of Trisquel:
$ sudo apt-get install triskel triskel-recommended

Having more editions of Trisquel (new meta-packages proposing whole Trisquel-customized systems) would mean more work for the few developers. Probably a bad idea (unless you want to step in).

If it is just about getting a default desktop environment, then it already is extremely simple. For instance, you can install the "gnome-shell" package (in Trisquel's repository) on top of the default Trisquel edition and enjoy GNOME Shell. As it has already been written, the process will be that easy to get a default Mate desktop on the next Trisquel because it will be based on Ubuntu 14.04 that will provide a package for Mate.

bad idea as that requires internet connection at the time of install. Not everyone feels comfortable with this.
However, maybe having different versions available to download would be a good idea (like Mint and Debian do).
One CD with Gnome 3 other with KDE, other with Mate, etc.

Gnome shell ftw. Sorry, but it's just the best (imo).

But there should definitely be the option to switch if people want to do that.

My preference goes to GNOME Shell too. But the Mini edition (based on LXDE) should be kept for people with older hardware.

Those wishing the choice of desktop at instsll time can use the Net edition. What about XFCE for the standard live edition?

The best option it's to have a system builder like http://susestudio.com/
The user may visit the Trisquel site and than go to download section.
There he/she may chose an interface like a wizard program which allow to chose in the first step the Desktop Environment. In the second step users may chose 64 or 32 bit. Than package is build and when is finished the user receive a mail with download link via email. How cool is that?
