I have attached a screenshot so you know what I am asking for. I want it to be a solid black color like the panel.
What are some beautiful and popular icons and themes that are compatible with free software?

To change the color of the menu you'll need to edit the gtkrc file in the gtk-2.0 folder inside your theme folder. Example -> /usr/share/themes/Numix/gtk-2.0/gtkrc

What you want to focus on is the first long line starting with "gtk-color-scheme =... ... .."

If I recall correctly the specific entry for the menu color is "nmenu_bg_color", so you assign to that entry the desired value which is in this case black, that is #000000

cheers

EDIT: I really like Numix circle icon theme which I recommend if you like flat round icons and moka if you prefer them squarish

Also a mate here made a very nice icon theme and posted in the forum. I used that one for some time but I really prefer Circle above all the icons I tried.

Thanks I really like the circle theme too! :)
Do you use numin-circle or numin-circle-light?

Here is a few screenshots of the themes I put together.

How do I save my current theme with saved installable deb file(s)? So I can use it again in later trisquel editions.

looks very good :)
you don't need a deb, you just create an archive of the theme folder and save it to an external hard drive or USB or whatever you use for backup. Right click the theme folder and "create archive" or something like that.
