Buried in Details (System Information) in System Settings, there is a tab that allows me to change default applications for 6 things; web, mail, calendar, music, video, photos. How do I change defaults for anything else, like .TXT files, or .ODT files? There used to a check box for 'always open with ...' when I opened a file using right-click > Open with > Other application. This no longer seems to be the case. Am I missing something?

Isn't there a tab "Open with" in the "Properties" of the file that you access from the contextual menu (i.e., the menu you get right-clicking on the file)? If so, you can define the default application and the additional applications (in the "Open with" sub-menu of the contextual menu) from that tab. That defines them for all the files of that same type.

There is. In Caja, right-click properties, open with.

Yes! Thank you MagicBanana. You've made my day! This functionality really ought to be accessible from "open with" in the right-click menu itself though. Bring back the "always use for files of this type" check-box!
