I can't, but it's useful when you does not want your Internet provider to be able to see your Bittorrent traffic. Personally, I doesn't use VPN.
VPNs are *excellent* for several reasons, including surveillance. Sure, if you choose a malicious service you are screwed.

Never tried PT before, why not torrent instead?
PT is more convenient. If you have a good Internet connection, you can watch as you download (a process similar to streaming but not quite).
That's basically the same. This documentary isn't new (2014), and copies are likely floating around for some time. I just wanted to share that now you can watch it more conveniently.
There's a magnet link you can use to preload the movie on your hard drive if that's what you want.
To be perfectly clear, Popcorn Time works with torrents.

I'll refrain from comment on popcorn time, but you should never let others silence you. Your letting the censors win. The risk from the entertainment industry is insignificant. They've not even targeted more than .0000001% of users. You have a *MUCH* higher chance of getting hit by a car than getting sued. And even if that happened you'd both settle for $20-$700 in near all cases.
I've never used Popcorn Time, but I can see the appeal. It gives that instant streaming approach to movies from BitTorrent and eliminates the more technical steps.
It's also worth noting that these cases happened in particular countries. I don't think the copyright system of the U.S. has the power to punish people for merely talking about Popcorn Time.
You could also just download it from the Bay, if you prefer that to streaming.
I've always found Popcorn Time's buffering annoying. I'd rather wait before watching a movie than during a movie.
