Could somebody recommend me an xmpp server?

I am looking for a new xmpp server to use as I can no longer connect to th uprod.biz xmpp server. Could anybody recommend an xmpp server to me?

You could try using jit.si.

I can only recommend these two and the use of OTR which is the best of the best and simple as cake if you want encryption.
