Voice recognition software for disabled

Hi, I'm currently dealing with a person who can not use your hands to writing documents. Uses proprietary software for writing by voice.
I would like to go to the extensive experience of the community to see if there is a free program for voice recognition. Basically this person needs to create text documents through the voice. Libreoffice'd use to write them.
I welcome your recommendations and help on how to install and use.

The sphinx packages might work for voice recognition. Another solution might be eviacam + dasher.

As far as I know, Simon is the best voice recognition for Linux, and is mostly free software. BUT I think there might be some issues with licensing in some parts... You will have to go and investigate and decide if you want to make a compromise (between having the person using windows and proprietary software or using Trisquel and a semi-free software.... it's a choice to make).
