I just heard about a new RISC-V board called the "Milk-V Pioneer". It's a mATX board that is more similar to a normal x86_64 motherboard than a SBC. It has four DDR4 memory slots, dual M.2 slots, three PCIe x16 slots using x8 lanes, five SATA ports, eight USB 3.2 ports, and dual 2.5Gb Ethernet ports. The CPU comes soldered on but the RAM; storage and dedicated GPU can all be added or removed manually. The CPU, while soldered on, is a 64 core chip. You can purchase just the board or you can purchase it as a complete system. It can use ECC RAM as well. It's not a cheap product but that has been the case form any RISC-V product that aims to be more then something low end. It's a very interesting product for anyone wishing to get away from Intel and AMD. Not sure how freedom friendly it is but hopefully one day soon I can find out.
The main website for it is here:
The board can be purchased from Crowd Supply or through Arace Tech:
