upon installing and running plasma-discover it does not show any application results when searching for an application to install.

Hello!
Could you be more specific on what package is not showing up?, as I get the same console output, but the packages are shown accordingly.
As a side note, Trisquel's version of discover removes third party sources like snap, that's part of the reason why trisquel ships it's own application manager, trisquel-app-install.
