Need something for writing/publishing LaTeX

There is LaTeX (in TeXLive packages). PDF files can be generated using
pdflatex, lualatex or xelatex (or dvipdfmx, although it's probably less
comfortable). PostScript is usually made using dvips (I rarely see such
files, in most cases pdflatex is probably better).
Or are you asking for an editor? I use Emacs with AUCTeX, there are
many other solutions.
You forgot about the option of compiling with 'latex' and then convert the DVI with 'dvipdf'. The huge difference with 'pdflatex' is in the image formats you can include. They are EPS with 'latex' and PDF, PNG, JPEG or GIF with 'pdflatex'. Of course EPS and PDF are preferred (unless we are talking about including pictures and 'pdflatex' is the way to go) because they are vectorial formats.
Like you, I do not see much point in creating PS files. In comparison with PDF, they are heavy, less common, with less features, etc.

AFAIK pdflatex also supports bookmarks and other PDF related attributes
of the document, which dvips cannot create. I might be wrong though.

Emacs with latex-mode is also not bad, if you know your way in LaTeX.
Packages Lyx and Gummi would seem appropriate. No first hand experience of neither.
I've used Lyx in the past. It's very user-friendly. You don't even have to know LaTeX in order to use it.

Thanks for the suggestions. For some reason some of those suggested, like LyX, weren't showing up at first for me in the repository. Eventually, after a reboot, it fixed itself; I guess.
I ended up installing Texmaker and LyX to try, and I also installed Kate, which I didn't realize had features to support writing in TeX.
I am a translator!
Lyx is very user friendly, but bear in mind that it creates files using its own open format which unfortunately isn't backward compatible (i.e. might not work on older version of Lyx) - of course you can always export to .tex to use a different editor . Gummi shows a preview of the text written every minute (or at a different interval if you change the settings) which is a cool feature.
