This may seem a daft question but how do I move the panel from the bottom of My desktop to the top ?

Via terminal (assuming you are running 5.5 on GNOME)

dconf write /org/gnome/gnome-panel/layout/toplevels/panel/orientation "'$GNOME_PANEL_LOCATION'"

where $GNOME_PANEL_LOCATION is "top" or "bottom"

top
