I know that in the repositories of Trisquel you can install openjdk-6 and 7 but why not 8? is it not free software or is just not in the repositories yet?

That is it. OpenJDK 8 and even 9 will be in Trisquel 8's repository because they are in Ubuntu 16.04's: http://packages.ubuntu.com/search?suite=xenial&keywords=openjdk

OpenJDK 8 will be the default JRE and JDK in Trisquel 8 if you choose to install the "default-jre" or "default-jdk" packages from apt.
